In a conversation with my friend Louanne yesterday the topic of coconut oil came up. Don't ask me how! Anyway, Lou went on to tell me that she'd been using it for awhile. I listened because she's extremely health conscious and has studied nutrition (she's not a nutritionist). I'd read some time ago that it was good for the skin and recently read an article stating that incorporating it into the diet can help the memory along with many other health benefits. Contrary to former beliefs, it is now being said that coconut oil is heart healthy and can benefit the body is several ways.
Studies have shown:
- Coconut oil can help the body resist viruses and bacteria that can cause illness.
- Coconut oil can fight off yeast, fungus, and candida.
- Coconut oil has a positive affect on our hormones for thyroid & blood sugar control so people who take coconut oil can see improvements in their blood sugar; it helps improve insulin use within the body.
- Coconut oil can reduce cholesterol. It has a saturated fat called lauric acid. This acid increases the good HDL cholesterol in the blood to help improve cholesterol levels
Louanne also mentioned that coconut oil can take a higher heat temperature than even olive oil so it's great for stir fry's and also great for baking. Its important that the coconut oil be organic, non-hydrogenated, and has no trans-fat. Also remember to consult your doctor or healthcare professional before incorporating something new into your diet, especially if you take medications.

I'm a vegetarian and often toss my veggies in coconut oil and then stir fry them with garlic and thyme. It's one of my favorite flavor profiles!
