Many people may believe healthy food is tasteless food. Not true! According to Chef Calvin Harris," it doesn't matter how healthy food is, if doesn't taste good, you won't eat it." In the March issue of Essence Magazine, I found two of his great recipes that I can't wait to try.
Pan Sauteed Tilapia with Jalapeno Lime Marinade ` Makes 2 servings
- 3-4 large, fresh jalapenos, minced (remove seeds for less heat)
- Juice of 3 limes
- 1 cup vegetable oil
- 3 tablespoons fresh cilantro, minced
- 4 cloves garlic, minced
- 2 (4-ounce) Tilapia fillets
Combine the first five ingredients in a bowl with a whisk. Marinate Tilapia in mixture for 2 to 3 minutes, depending on thickness. Saute at high temperature for approximately 2 minutes per side.
Added Bonus: Tilapia is a great source of protein, and the jalapeno not only add flavor but it's also an antioxidant with anti-inflammatory properties. The garlic can help keep blood pressure in check and the cilantro provides fiber and antioxidants too.

Zing Salmon - Makes 2 servings - Prep time: 4 minutes - cooking time: 5 minutes
- 4 tablespoons low-sodium soy sauce
- 3 tablespoons sesame oil
- 1 teaspoon ginger, chopped
- 1 teaspoon garlic, minced
- 1 tablespoon red chili dipping sauce
- 2 (4-ounce) salmon fillets
Combine the firs five ingredients in a bowl with a whisk. Marinate salmon fillets in mixture for 2 to 3 minutes, depending on thickness. Cook at high temperature for about 2 minutes per side.
Added Bonus: Salmon contains omega-3 fatty acids, which is great for the heart and helps reduce blood clots and protects against heart attacks. Omega-3s also increase HDL (the good cholesterol) levels. The ginger, used in the marinade, may help decrease LDL cholesterol.
Add your favorite vegetable or a great salad and you have a perfect meal that nourishes your body and feeds your soul. Take the very best care of yourself from the inside to the skin-side.
